To say that I love chocolate would be a SERIOUS understatement. I love chocolate so much, that even when I’m on a diet and counting calories, I will forgo healthy calories – like chicken breast, to leave room in my calorie counting for chocolate.

- I often find that a drizzle of chocolate ganache can take any dessert over the top! This Coconut Bread Pudding with Coconut Cream, Chocolate Ganache and M&M’s is a tribute to my Puerto Rican and Cuban heritage. I think my grandparents would be excited to taste the creamy texture of my bread pudding combined with the aromatic coconut scent of the cream. The chocolate adds a touch of well, chocolate flavor, and the M&M’s provide a bit of crunch.

It’s a Cinnamon Choco Taco. “This dessert taco is perfect for the littles to help make and enjoy OR pile on extra sweet and crunchy toppings for the adults. Either way, it is seriously GOOD!” Based on the photos I’d say I believe so!
- Does a 100 Calorie Chocolate Cupcake Recipe belong on this list of crazy good chocolate recipes? I think so! The chocolate cake mix has been adjusted to cut calories without sacrificing chocolate flavor. I use real cocoa powder in this recipe. Thee cupcakes sacrifice the calories but not the taste!

Stephanie at Somewhat Simple shares her easy recipe for S’mores Rice Krispy Treats. “They’re extra gooey, thanks to the addition of extra mini marshmallows, stirred in after the cereal is added. The marshmallows only melt halfway, so they form little pockets of marshmallowy deliciousness throughout the treats.” WOOT!

Katerina created Dulce de Lecce and Chocolate Banana Bites. “These little bites are so ridiculously easy to make and so delicious you will be amazed. I used some of my overripe bananas which I am sure almost all of us have from time to time and I made Dulce de Lecce with the pressure cooker method which is so much easier than the usual procedure.”

I tinkered with my crazy good apple pie recipe to create a coffee cake inspired by the flavors of fresh picked apples, praline pecans, crumble topping, and pecan pie. Wait, pecan pie? – How did that get in there? – Well, more on that later… apple pie.
