Planning a Hawaiian Luau
When things heat up, grilling outdoors is a great way to spend time outside and enjoy the flavors of grilled foods. For our small gathering of family and friends I grilled up a Hawaiian Grilled Summer Vegetables Recipe with fresh summer veggies and pineapple to create some mini tropical “islands” on TRISCUIT crackers.
Hawaiian Grilled Summer Vegetables Recipe
Preparing grilled summer veggies is easy. Just wash, slice, and place them in a grill basket. Turn your grill up to medium heat and grill for four to five minutes on both sides. If desired, you can add a bit of spray oil to the veggies for a crispier grill result.
Ingredients for Hawaiian Grilled Summer Vegetables Recipe
- TRISCUIT Original
- TRISCUIT Hint of Salt
- TRISCUIT Cracked Pepper & Olive Oil
- 1 Yellow Bell Pepper
- 1 Red Bell Papper
- 1 Orange Bell Pepper
- 1 Package of Mushrooms
- 2 Zuchinni
- 2 Yellow Squash
- 1 Pineapple Core with Pineapple juice
- 1 Bottle of Soy Sauce
- 1 Bottle of Teriyaki Sauce (to add to the pulled pork if desired)

Directions for Hawaiian Grilled Summer Vegetables Recipe
Step 1: Wash and dry all the vegetables. Cut them into slices. Be careful not to cut them too small, so they stay inside the grill basket. I picked up our grill basket at King Soopers – the same grocery store where I picked up all of these fresh vegetables.
Step 2: Grill your Vegetables. Turn your grill to medium heat and wait a few minutes for it to warm up. Once it’s ready, spray some spray oil onto your veggies and place the basket directly on the grill. Close the lid. Grill on each side of the basket for 4-5 minutes on each side. You can add more spray oil for crispier grilled vegetables. You will also need to grill your pineapple slices.
Step 3: Keep the vegetables and pineapple warm. Place everything in the oven to keep it warm until all the vegetables are grilled.
Step 4: Assemble the “Tropical Island” appetizers. Cut the grilled veggies into smaller bite-sized pieces. Place the slightly larger pieces on top of a TRISCUIT cracker and add another smaller vegetable, a small piece of pineapple or both. Then take two baker’s syringes and add pineapple juice to one of them and soy sauce to the other. Squeeze a few drops of each of top of each and every cracker.

Step 5: Heat and Serve. I even topped a few of my “Tropical Islands” with a touch of shredded cheese. For these, I placed them in the oven for a few minutes to melt the cheese. Don’t be afraid to keep everything in the oven on warm for up to half an hour before you eat. TRISCUIT crackers are very hearty and will stay nice and crisp right up until you eat them.
