Ever had a favorite type of muffin and just wanted to add a little something extra? If so, you’ll love my banana muffins with a touch of caramel and a chocolate ganache topping. I make banana bread all the time from leftover bananas and this recipe is a slight adaptation but with a few yummy extras. You can find more of my easy and delicious recipes here: Easy Recipes.
I like my banana muffins with French Vanilla coffee. My husband is quick to point out that I’m a frou-frou coffee drinker. I like cream and sugar in my coffee and I prefer my coffee on the sweet side. I made the coffee you see here in my new Keurig 2.0 coffee-maker.
Ingredients for Caramel Banana Muffins
- 1 3/4 cups all-purpose flour
- 2/3 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup mashed ripe banana
- 1/3 cup shortening, margarine or butter
- 2 tablespoons heavy cream or milk
- 2 eggs
- 1/2 cup caramel pieces
- chocolate ganache
You’ll also need a muffin baking dish. I used paper cups to line my baking dish – the paper cups are optional. It helps to have all your ingredients measured and ready to work with.
Directions for Caramel Banana Muffins
Step 1 – Cup up two to three bananas and mash them into an applesauce consistency.
Step 2 – Add the wet ingredients to the mashed bananas.
Step 3 – Mix the dry ingredients in a separate bowl. I always like to mix my wet and dry ingredients separately before combining. Keep the caramel pieces separate – you’ll add those last.
Step 4 – Pour the dry ingredients into the wet ingredients and mix to combine.
Step 5 – Gently fold the caramel pieces into the mix.
Step 6 – Pour the mix into the muffin tins about 3/4 of the way full.
Step 7 – Bake for 22 minutes at 350 and voila’ you have Caramel Banana Muffins. Wait for the muffins to cool a bit and then pour on a bit of chocolate ganache. Pair with French Vanilla coffee and you have two of my favorite things for breakfast.

My husband loves thick, bitter coffee, and my folks enjoy decaffeinated coffee. In the evenings I like to have some tea and the Keurig accommodates tea as well.
