How does your family celebrate Easter? Do you host an Easter meal? Stage an Easter egg hunt for kids? Do you serve cake? Or would you consider cupcakes for your Easter gathering?
Well, this year, I decided to give something new a try for Easter – cupcake decorating.
Have you ever seen some of the beautiful cake decorations online where the baker has created a beautiful flower arrangement using frosting? If you’d like to create a Spring inspired Easter table setting this year with frosted edible flowers, keep reading for some tips and delightful Easter printables.
A Garden-Inspired Easter Party
I love the fresh colors of spring! The pinks, greens, yellows, and blues. These Pink Champagne Cupcakes are not only aromatically pleasing, they taste like sweet champagne. I’m still working on my frosting techniques, but I’ll call this a pink crinkle flower. I used two different pink colors packed into the same icing bag and a Wilton’s #104 Flower Petal Tip.
Of course, I also had to make some hydrangea cupcakes, so I used two different blue frosting colors and a Wilton’s #224 frosting trip for creating Drop Flowers.
I used real fresh green leaves to embellish the floral cupcakes. I also created some yellow flowers using the same Wilton’s #224 frosting trip and two different colors of yellow frosting packed into the same frosting bag.
Now, the other unique thing about these cupcakes, is that there is a surprise inside. I used a cupcake coring tool to hollow out the middle and add M&M’s® Pastel Peanut candies and MARS Spring Minis Mix to the center. I then covered the candies in frosting to hide them. Just think… the flavors of Pink Champagne and Chocolate. So, yummy!
Creating a Garden Table Setting
Now, for me, an Easter garden wouldn’t be complete with a few floral cupcakes. I set our Easter table with fresh flowers, a garden sign, a stuffed bunny, fresh fruit, and M&M’s® Pastel Peanut candies and MARS Spring Minis Mix. I love the sweet combination of M&M’s® and cupcakes with the crisp crunch of a fresh apple, or the juicy flesh of a “cutie” orange.
You might also notice the Easter Party decorations in these photos that you can download as a part of this post. They include an Easter party banner, napkin ring holders, table scatter, cup labels and cupcake toppers, signage and Easter activities for kids.
I included adorable clip art on these printables of bunnies, chicks, carrots, flowers and Easter eggs. Children love the fun coloring pages and puzzles included in the activity pack.
Pink Champagne Cupcakes Recipe
Now, before we begin, lemme let you in on a little secret. You can make your own cake flour using all purpose flour and corn starch. Now why is that important? Well, sometimes cake flour is hard to come by in the store.
The primary difference between cake flour and all-purpose flour is the protein content (which becomes gluten). The protein content of cake flour is 2-3% less than the protein content of all purpose flour, which is about 11% protein content. When you’re making cakes, you want to use a flour that’s lower in protein. It should have a little gluten for structure but not so much that it gets tough and chewy.
To successfully remove some of the extra protein in all-purpose flour, for every half cup of flour remove 1 Tablespoon of the All Purpose Flour and replace it with one Tablespoon of Corn Starch. This Pink Champagne Cupcakes Recipe calls for 1 & 1/2 Cups of Cake Flour, but since I couldn’t find any, I just took 1 & 1/2 Cups of All Purpose Flower and removed 3 Tablespoons of the All Purpose Flour and replaced them with 3 tablespoons of Corn Starch.
Ingredients for Pink Champagne Cupcakes Recipe
- 1 & 1/2 Cups Cake Flour (I used the corn starch and all purpose flour mixture as outlined above)
- 1 & 1/2 Cup All Purpose Flour
- 1 Tablespoon Baking Powder
- 1/2 Teaspoon Salt
- 1 Cup Champagne or Sweet Wine
- 1/4 Cup Milk
- 1 Cup (2 sticks) unsalted butter at room temperature
- 2 Cups Granulated Sugar
- 2 Drops red food coloring
- 5 Large Egg Whites
- 1/4 Teaspoon Cream of Tartar
- M&M’s® Pastel Peanut candies – to create a “surprise” inside the cupcakes
- MARS Spring Minis Mix – to create a “surprise” inside the cupcakes
Directions for Pink Champagne Cupcakes Recipe
Step 1: Line the cupcake tins with Cupcake Liners. This recipe made 18 cupcakes. I found some beautiful floral inspired cupcake liners in shades of pink, green and lavender.
Step 2: Preheat oven to 350 degrees.
Step 3: In a large mixing bowl, sift together the cake flour, all purpose flour, baking powder and salt.
Step 4: In a separate smaller bowl, combine the milk, champagne and food coloring and mix.
Pink Champagne Cupcakes Recipe Video Tutorial
I’m a visual learner, so I decided to create this short video to demonstrate the steps for creating this tasty Pink Champagne cupcakes recipe.
Written step-by-step continued.
Step 5: In a third, large mixing bowl, cream together the room temperature unsalted butter and sugar using a mixer. Creaming butter and sugar together takes awhile. Start by creaming the butter for at least one minute. Then add the sugar one tablespoon at a time. Add the sugar in slowly to make sure it gets fully incorporated.
I used a Kitchen Aid stand mixer with the paddle attachment and it worked perfectly. Just use the medium to medium high setting and scrape down the sides of the bowl to keep the surgery butter mixture inside the bowl. Keep mixing until the mixture is light and fluffy and the granulated sugar is throughly mixed in.
Step 6: Decrease the mixer speed to low and add in the flour mixture about 1 cup at a time. Alternate with the champagne mixture adding about 1/2 Cup of the champagne mixture with each addition of the flour mixture. Stop in-between, to scrape dow the sides of the bowl and ensure that everything is mixed together. If you would like a richer color, add one to two drops of additional food coloring to the batter during this step and mix throughly. Remove the mixed batter from the mixing stand.
Step 7: In another large mixing bowl, mix together the egg whites and cream of tartar. Place the mixing bowl on the stand mixer stand and whip the egg whites with the whisk attachment until stiff peaks form.
Once you have stiff peaks, slowly add the egg white mixture into the flour and champagne mixture by gently folding in the egg mixture.
Step 8: The mixture is light and almost fluffy. Use a large tablespoon to scoop up the batter and pour it into the cupcake liners. It’s about two scoops per cupcake.
Step 9: Bake the cupcakes at 350 degrees for 22 minutes. The range for baking is anywhere from 18 to 25 minutes, so keep an eye on your cupcakes, as oven will vary.
Step 10: Cool the cupcakes on a wire baking rack before frosting. Hot cupcakes wil melt the frosting and make it imposible to create a flower on the cupcake.
Step 11: Decorate the cupcakes. I cored out the centers and added M&M’s® Pastel Peanut candies and MARS Spring Minis Mix candies to create a cupcake surprise inside. Then I colored store bought vanilla icing in six colors. Light pink and dark pink, light yellow and dark yellow, and light blue and lilac. I placed two of each set of complimentary colors in one frosting bag and frosted the cakes to resemble flowers. A real green leaf was added at the end to complete the look!
