Here I’m sharing a tasty and Easy Recipe for Slow Cooker Beef and Vegetable Stew. It’s a one-pot meal you can set in your crockpot, leave all day, and come home to a great smelling kitchen and a fabulous dinner.
As a mom in my 40’s with two young children, winter is a bit harder than summer on my energy levels. We do not get to spend as much time outside and my body just doesn’t do as well without a fresh dose of daily sunlight.

Best part -it’s a one-pot meal that includes loads of vegetables, potatoes, and beef. Set it in your crockpot in the morning and come home to a delicious family meal.
Ingredients: Easy Recipe for Slow Cooker Beef and Vegetable Stew
- 2 pounds beef stew meat, cut into 1-inch cubes
- 1/4 cup all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 2 cloves minced garlic
- 1 tablespoon paprika
- 1 tablespoon Worcestershire sauce
- 1/2 onion, chopped
- 2 boxes of beef broth
- 4 potatoes, peeled and cubed
- 3 carrots, chopped
- 3 celery stalks
Stew Gravy Ingredients
If you like a heartier gravy on your meat when the stew is finished, just whip up the combination below and pour it on. With four people to feed, some folks in our family like no gravy, while others like lots and lots of it. Making it separately allows me to satisfy a variety of needs.
- 1/2 cup all-purpose flour
- 1 cup of stew broth (post cooking)
- Mix the two while the broth is warm to make a stew gravy you can pour over the meat and vegetables from the stew.
Directions: Easy Recipe for Slow Cooker Beef and Vegetable Stew
Step 1: Prep the vegetables. Start with the veggies. I washed and peeled the potatoes and carrots. I stripped off any excess leaves from the celery stalks and outlying skin from the onion.
Step 2: Chop and dice the vegetables. I chopped the carrots and celery and quartered the potatoes and onion. Just leave it on the chopping board until you’re ready to dump it into the stew.
Step 3: Brown the meat. I lightly browned the stew meat the night before. This step is optional.
Step 4: Add the broth and seasonings. Add two boxes of beef broth to the crockpot or slow cooker. Add in 1/4 cup flour, salt and pepper to taste, and the Worcestershire sauce. Stir to combine. Add the beef.
Step 5: Add the vegetables. Just dump in all the veggies from your cutting board and stir to combine.
Step 6: Add the last two ingredients. Add the garlic and the paprika.
Step 7: Cover and cook in a crockpot for 8-10 hours on low or 3-4 hours on high. It’s best to know your slow cooker. Mine tends to cook a bit warmer and quicker than others so I often shorten the cook time by an hour (on low) or two (on high).
Step 8: Make the gravy. If someone in your family likes a thicker gravy on their stew, just whip up the stew ingredients above and pour over the top (totally optional step).
