Lunch Option #4: Couscous Veggie Salad
Couscous is a wonderful alternative to things like pasta or white rice. From a nutritional standpoint it has more protein and fiber compared to those alternatives, and if you buy a couscous with spices and flavors added, it tastes better too!
Ingredients for Couscous Veggie Salad:
- 2 Cups Cooked Couscous
- 1 Cucumber
- 3 oz. Grape Tomatoes
- 1 Pocket-sized LISTERINE® POCKETPAKS® Cool Mint 72c
Directions for Couscous Veggie Salad:
- Cook couscous according to package directions. Set aside 2 cooked cups.
- Cut cucumber into slices and half the slices.
- Add grape tomatoes to the cucumber salad.
- Serve with Water.
