Summertime is my absolute favorite time of the year. I’m originally from Florida and I love the warm sunshine, longer days, and all the fun water activities that go with summer.
Now, one of the things that is a bit more challenging in summer is cooking. Since now I live in Colorado and there is no air conditioning in our home, one of the last things I want to do during the summer months is turn on the oven to bake food.
So today I am going to share the easiest ever summer dessert that only takes 4 ingredients to make.
How to Make No-Bake Fruit and Nut Cupcake Cookies
Now, as the mother of two small boys, it’s almost impossible to please them both when it comes to ensuring that each serving size is equal. So what’s a mama to do? She serves these NILLA Wafers, apples, caramel, and almond treats in a cupcake paper wrapper. Not only does it make this sweet dish colorful and cute, it makes it easy to manage serving sizes and ensures that everyone gets equal amounts.
Total Bonus: This recipe gets them to eat more fruit – WOOT!
No fighting over the No-Bake Fruit and Nut Cupcake Cookies – OK boys?
*Nut Allergy Warning – omit the almond slices if your child has a nut allergy. Never serve a child nuts age 3 and under as small items can present a choking hazard.

Ingredients for this easy recipe: No-Bake Fruit and Nut Cupcake Cookies
- 1 Box of NILLA Wafers
- 2 Freshly washed and sliced red apples (pick your favorite)
- 1/2 Cup of caramel fruit dip
- 1/2 Cup sliced almonds
- Paper Cupcake Holders
- 1 Baker’s syringe
Directions for this easy recipe: No-Bake Fruit and Nut Cupcake Cookies
Step 1: Wash and cut fruit. Wash and carefully dry your fruit. Use a sharp knife to cut and trim the apples into 1″-2″ chunks.
Step 2: Arrange the NILLA Wafers. I placed two cookies at the bottom of each paper cup.
Step 3: Add 3-4 apple pieces on top of the NILLA Wafers.
Step 4: Add the caramel fruit dipping sauce. To make the sauce easier to use, you can heat it in the microwave for 20 seconds in a glass bowl. Mix it and transfer it to a baker’s syringe or a frosting dispenser with a small tip. Gently dispense the caramel sauce on top of the apples and cookies to create a soft pattern. You could also try a chocolate fruit dipping sauce. Either works great for creating a custom display.
Step 5: Sprinkle on a pinch of almond slices.
Step 6: Add the cookie topper. Add one NILLA Wafer on top. Dip one side of an almond slice into the caramel sauce and lay it on top.
Voila! You have these gorgeous No-Bake Fruit and Nut Cupcake Cookies — perfect for any party or summer gathering.
