Here I’m sharing my tasty Tequila Lime Grouper recipe. Serving up a meatless dish doesn’t have to be lackluster – it can be packed with nutrients and flavor. Plus, when you pair this fish with crunchy grilled asparagus, and angel hair pasta wrapped up with grilled red peppers and onions, you get a medley of flavors with every bite!
A Quest for Delicious Seafood
My husband is originally from Texas, and I’m from Florida. And we currently live out in the Rocky Mountains. Now, the mountains are beautiful, but there isn’t an ocean in sight. Do you know what that means? It’s harder to get your hands on fresh fish from the ocean!
Well, I don’t let a little thing like an entire mountain range stop me from getting a bite out of my favorite fish – grouper. I love the firm texture of grouper, and it’s a mild tasting fish. When you make it correctly, it’s light and flaky and it melts in your mouth with each forkful.
Grouper is best served straight from the pan or grill. You don’t want to have to reheat it if at all possible. It’s still edible but loses some of the flaky texture when you serve it reheated from the refrigerator.
A Seafood Solution
For families who celebrate Lent, dishes like this Tequila Lime Grouper are the perfect solution. Hearty and filling and packed with nutrition and flavor, families will be enriching not just their hearts during lent, but their bodies as well.
Plus, this dish is easy to make. All you need is a grill pan, some Clamato and Tequila Lime seasoning, and fresh butter, and you’ve got an easy pan cooked meal that is ready in minutes.
Ingredients for Tequila Lime Grouper Recipe and Fresh Grilled Vegetables
Now, if you can find fresh grouper, by all means – use it to make this dish.
- 4 Fillets of Fresh Grouper
- 2 Cups of Clamato
- 2-3 Tablespoons of Unsalted Butter
- 2 Tablespoons of Tequila Lime Seasoning
- 2 Fresh Limes
- 1 Bundle of Asparagus
- 1 Large Red Bell Pepper
- 1/2 Large Red Onion
- Non-stick cooking Spray
Side Dish: Chopped Vegetable Salad
- 1 Cucumber – cubed
- 1 Avocado – cubed
- 1/4 Large Red Onion – cubed
- 1 Cup Red Cherry Tomatoes – cut in half
- 1/4 Cup vinegar
- 1/4 Cup olive oil
- 1/2 Teaspoon Salt
Cooking Tools:
- Grill Pan
- Silicone Cooking Tongs
Directions for Tequila Lime Grouper Recipe and Fresh Grilled Vegetables
Step 1: Marinade the grouper in a shallow dish submerged in Clamato. Sprinkle on some of the Tequila Lime Seasoning. Allow the fish to marinade while the vegetables and pasta are cooking.
Step 2: Set a pot of 3-4 cups of water to boil. Add 3-4 ounces of angel hair pasta to the water once it is boiling. Boil for four minutes for al dente pasta or five minutes for softer pasta. Drain and stir in 1 tablespoon of olive oil to keep the pasta from sticking and to add flavor.
Step 3: Wash. Wash all produce thoroughly.
Step 4: Chop and Cube. For this dish, most vegetables will need to be cubed – or cut into chunks 1/2 inch square. Do not cube the asparagus, just trim off the bottom quarter of the stalk near the root. If you want to create the vegetable side dish, just cube the avocado, onion, cucumber, and tomatoes and mix them together with the vinegar, salt and olive oil.
Step 5: Sauté the vegetables. For this meal, everything will be cooked at medium to medium high heat. Heat a tablespoon of butter in a pan or use non-stick cooking spray. First, grill up the asparagus. About five minutes on each side on medium heat. (Stovetops vary). Then sauté the red bell peppers and onions. You want them soft on the inside when you take them off the grill. This will take 3-5 minutes on each side to cook.
Step 6: Add the veggies to the pasta. To ensure a savory pasta flavor, mix in the bell peppers and onions once they are cooked.
Step 7: Sauté the grouper. Heat a tablespoon of butter in the grill pan. Gently pour the Clamato and Tequila Lime Seasoning into the grill pan and then add the fish. Feel free to squeeze lime juice onto the Grouper as you cook it. You can also sprinkle on additional tequila lime seasoning as it cooks. Keep an eye on the fish. It should only take 4 or 5 minutes on each side, or no more than 10 minutes to cook. Use a fork to test the flesh for desired flakiness.
Plate and Serve up Delicious Tequila Lime Grouper
Serve up this delicious Pan Grilled Tequila Lime Grouper with grilled vegetables and pasta for the perfect meat-free dish. If you quartered the avocado, tomatoes, onion and cucumbers you’ll also have the perfect vegetable side-salad.
Where can you find Clamato and fresh produce?
The asparagus, tomatoes, cucumber, onions, and avocado can all be found at Walmart in the produce section. I picked up the Clamato where you find juice drinks.
