Homemade Twice-Baked Jalapeño Poppers
It’s that time of year – football season! And since it’s football season, we’re enjoying some time snuggling up on the couch while the playoffs are on and eating yummy football-inspired foods.
Occasionally, we’ll host guests and everyone will gather around the big screen and watch the game. My husband is from Texas and there’s nothing he loves more than Mexican food. So I decided to whip up some hearty Twice-Baked Jalapeño Poppers inspired by one of his favorite things to eat – jalapeños!
Now these Twice-Baked Jalapeño Poppers are stuffed with potato, cheese and bacon are they are not terribly hot. For this recipe I used LA MORENA® picked Jalapeño peppers. They’re perfect for party appetizers because they’re not too hot but they are packed with flavor.

Directions to Make Twice-Baked Jalapeño Poppers
Please keep in mind, this recipe has two parts. But the results are – oh.so.worth.it… The first part is a perfectly baked potato. The second part involves mixing the insides of the baked potatoes with yummy goodness like sour cream and butter, and stuffing and re-baking the potato mix into sliced jalapeños and potato skins.
Ingredients to Make Twice-Baked Jalapeño Poppers
- 10 Russet Potatoes
- 5 Tablespoons of Olive Oil
- 1/4 Cup Sea Salt
- 1/8 Cup Pepper (season to taste)
- 1 – 16 Oz. Container of Sour Cream
- 1/2 Stick of Butter – melted
- 1 & 1/2 Cups shredded Monterey Jack Cheese
- 4 Ounces of Bacon Bits (approximately 8-10 pieces of cooked bacon — crumbled)
- 1 – 28 oz can of LA MORENA® Whole Jalapeños
- 1 – 7 oz can of LA MORENA® Chipotle Sauce
- 1 – 7 oz can of LA MORENA® Sliced Jalapeños (optional – topping)
Step 1: Preheat your oven to 425 degrees. Start with Russet Potatoes. Wash the exterior of your potatoes throughly. Poke the skins to allow the potatoes to breathe during the cooking process. Line a baking sheet with foil or parchment paper and spread the potatoes out along the surface with at least two inches between each potato.
Step 2: Coat and season the Russet Potatoes. To get a light, flaky skin, coat the exterior of the potatoes with olive oil. Then sprinkle on some sea salt to crisp the skin (you could also use regular table salt).
Step 3: Bake the Russet Potatoes. Bake the potatoes for 60 to 70 minutes. Turn them over every 20 minutes or so and check for doneness by piercing them with a fork. You want to wait to remove them from the oven until the skins are dry and the insides of the potato are soft when pierced.
Step 4: Half and core the Baked Russet Potatoes. Cut the potato down the middle, in half, length-wise. Using a spoon or fork, slice into the outer rim of the fleshy center and spoon out the insides. Place the insides into a large mixing bowl. When removing the insides, try to keep a thin layer of potato inside the skin and leave the skin intact – you want to be able to stuff it later.
Step 5: Mix and mash the potatoes. Add 10 ounces of the sour cream (save the remaining for extra topping if desired), the butter, a pinch of salt and a pinch of pepper to the mashed potato mixture.
Step 6: Split and remove the insides of the jalapeños. I recommend using gloves when working directly with jalapeños. They have an oily skin which can leave residue on your fingertips. If you do not have gloves, cover your hands in cooking oil and wash them throughly with soap and water when you’ve finished working with the jalapeños. Make sure not to touch your eyes or nose for several hours.
Step 7: Stuff the potato skins and jalapeños with the potato mixture. Reheat the oven to 400 degrees.
Step 8: Top the stuffed potato skins and jalapeños with bacon pieces and shredded cheese. Bake for 20 minutes at 400 degrees.
A Popular Football Party Appetizer
Voila’ – there you have it. A popular football party appetizer that pleases a variety of taste preferences. I made a few potato skins without any jalapeños, some with jalapeños on top, and my Twice-Baked Jalapeño Poppers with Bacon. YUM!
