Beef Arepas
This dish combines lean ground beef, pickled onions, avocados, and radishes for a Mexican inspired meal. This recipe combines the flavors of Venezuelan and Columbian cuisines. This dish is so delicious (all of the meals were) there was not a scrap of it left after dinner!
Now, I realize that the way I’ve photographed these Beef Arepas makes them appear more like an appetizer, but I assure you, each portion comes with enough ground beef to fill a grown man. I just could not fit all the meat on the corn patties. The Beef Arepas portions are 775 calories per servings, a hearty serving by anyone’s standards.
The flat, round cornbreads are made by hand and cooked in a pan. The Blue Apron spice mix includes a complex blend of Mexican spices for the tender ground beef, and everything is pulled together perfectly with creamy avocado and red onion.
I’ve never had pickled onions and was pleasantly surprised by the flavor. I ate every last one. And the radishes were so fresh and tasty – I’ve never eaten a radish before, and I regret not having tried radishes sooner. I’ll definitely be adding these to our family’s regular meals from now on.
