Peruvian Roast Chicken and Potatoes
To say that I love oven roasted potatoes would be an understatement. There is something about the salty, crisp flavor of potatoes cooked in the oven that makes my taste buds happy!
This dish for Peruvian Roast Chicken and Potatoes takes some of our family’s favorite ingredients and takes them to a whole new level of flavor. This was relatively easy to prepare and fairly intuitive. After making it I wondered why I hadn’t thought of this combination of flavors myself! See, I AM learning new skills thanks to Blue Apron.
The secret to this Peruvian Roast Chicken lies in the unique blend of smoked paprika, ground cumin and onion powder used to create the seasoning. The seasoning acts as a rub for each chicken breast and adds loads of flavor to this dish.
This dish took the longest to prepare thanks to the potatoes. They potatoes had to be diced and baked 8 minutes prior to adding the chicken. But as I mentioned, roasted potatoes are a personal favorite, and they were worth every ounce of effort it took to prepare and bake them.
Another tip – this dish is enhanced by the skin on the chicken breast. You want to leave the skin attached for the best flavor, and a more tender chicken breast. Total calories per serving: 670.
